Ingredients:

  • 400 g (14.1 oz) of pasta (paccheri or spaghetti)
  • 350 g (12.3 oz) of anchovies (fresh)
  • 300 g (10.5 oz) of cherry tomatoes
  • Extra virgin olive oil
  • 1 clove of garlic
  • A little bit of parsley
  • A little bit of hot chili pepper (optional)
  • Salt

Method:

Start by cleaning the fresh anchovies, remove the head, cut them in half, and remove the bones. Clean them under water and keep them apart.

Clean the cherry tomatoes and cut them in half (1/4 if they are big). Chop the parsley and the chili peppers.

Boil the water for the pasta and cook the pasta.

In a large pan, brown the garlic and the chopped chili in a thread of oil.

Add the cherry tomatoes and a little bit of salt. Cook on high heat for 5 minutes with a cover.

Once the tomatoes start to wither, add the anchovies (there is no need to cut the anchovies in pieces as they will divide into pieces when cooked).

Mix and cook for another 5 minutes. Once the anchovies are cooked, turn off the heat and add the chopped parsley.

Once the pasta is ready, drain it (al dente) and add it to the pan. Mix everything on low heat for 1-2 minutes (keep some water from the pasta to render the sauce creamier!).

Storage:

It is advisable to prepare and consume pasta with cherry tomatoes and anchovies as soon as it is ready.

If you prefer, you can prepare the dressing a little in advance and store it in the refrigerator for no more than a day.

Advise:

Add black olives or fennel to taste instead of parsley.

If you want to add a crunchy note, toast breadcrumbs with a little extra virgin olive oil and pour it on the plates: your guests will surely like it!
