Italian Bread and Tomatoes Salad easy recipe

Today I want to introduce a quite typical Italian salad: Italian Bread and Tomatoes Salad. It contains all the taste of Italy and the necessary nutrients for a good and healthy meal.

Before the recipe, a little explanation of the nutrients this salad contains for your body.

Tomatoes contain vitamins C and K, potassium, and folate. Lycopene is also abundant in tomatoes, which has been linked to a reduction in cancer and heart diseases.

Indeed, fresh tomatoes are very low in carbs (containing mainly simple sugars and insoluble fiber) and are appropriate for weight loss. Some studies also show that eating tomatoes benefits skin health and protects against sunburns. 

Cucumbers are also low in calories which help with weight loss, but they also contain important vitamins and minerals essential for our body (especially when eaten with the peel).

They contain about 96% of water which help with hydration and many antioxidants such as flavonoids and tannins which help to reduce free radicals. As cucumbers are rich in fiber, they also help to prevent constipation and increase regularity.

Olives, typical of Mediterranean cuisine, are rich in vitamins and antioxidants.

They contain vitamin E, which improves skin health and help the immune system, and studies show that eating olives also protect against osteoporosis.

Add some mixed salad leaves, basil, and baked bread, and dress it with good olive oil and balsamic vinegar. I hope you will enjoy it!

Recipe Difficulty Level: super easy Servings: 4


  • 800 g (28.2 oz) of mixed salad
  • 80 g (2.8 oz) of cherry tomatoes
  • Black olives
  • Half onion
  • 2 cucumber
  • Basil 
  • 4 slices of bruschetta bread
  • Salt
  • Black Pepper
  • Extra virgin olive oil
  • Balsamic vinegar


On a baking tray, lay the slices of bread and pour a thread of oil on the top of the bread. Cook in a preheated oven at 180 C (356 °F) for 5/8 minutes (until the bread becomes gold). Once the bread is ready, cut into cubes.

In the meantime, clean the mixed salad. Cut the onion and the cucumber is thin slices. Now cut the cherry tomatoes into 4 parts.

On a bowl or a plate, lay all the vegetables and the bread. Add basil and olive. 

Season with extra virgin olive oil and balsamic vinegar.
