Carrots and green beans Salad easy recipe

Carrots and green beans Salad is a very rich salad and a very easy recipe. The main ingredients are carrots and green beans.

Carrots contain various vitamins, minerals, and fiber, and they are good antioxidants (which help the body to reduce free radicals, etc.).

As carrots are rich in vitamin A, they help to improve vision.

Indeed, new studies show that a great use of a high-fiber diet, such as carrots, reduces the risk of colorectal cancer.

Just think that a carrot contains around 1.7 g of fiber (which is between 5% and 7.6% of a person’s daily need, of course depending on the age).

Green beans have important diuretic properties and are ideal as detox and reducing toxins in the body.

They contain a great amount of calcium and hearth protective flavonoids (commonly found in fruits) which have anti-inflammatory properties and regulate thrombotic activities, preventing blot clots.

Indeed, green beans are rich in carotenoids, which prevent molecular degeneration.

Based on the book ‘Healing Foods’, green beans contain vitamin K, which reinforces bones.

Finally, green beans are rich in iron (they contain about twice the amount compared to spinach!).

Iron is essential to transport oxygen from the lung to the body and help to improve the health of people struggling with anemia and low energy.

To these ingredients, I add some lattice, rich in vitamin K and water, and peppers (rich in beta-carotene and vitamin C- which help skin and hair as it helps to build and maintain collagen) to further the nutritional properties of this fantastic salad.

Healthy Salad

Recipe Difficulty Level: very easy


  • 200 g (7 oz) of lattice (or mixed salad)
  • 1 carrot
  • 260 g (9 oz) of green beans 
  • 1 pepper
  • ½ tablespoons of pine nuts
  • Extra virgin olive oil
  • Fresh juice of half lemon
  • Salt
  • Black pepper (optional)


Clean the green beans and cook in water for 15 minutes (if you use the frozen ones, they should cook for about 8 minutes). 

After that clean, peel, and cut the carrot in round. Clean the lattice and the pepper and cut them into pieces. 

On a hot pan, cook the pine nuts for a few minutes, until they become gold.

Mix everything in a bowl and season with extra virgin olive oil, lemon juice, salt and pepper,
