Recipe Difficulty Level: super easy Servings: 4

Ingredients:

  • 500 g (17.6 oz) of broccoli
  • 300 g (10.5 oz) of potatoes
  • 450/500 ml (2 cups plus 1 tbsp) of vegetable stock
  • ½ onion
  • 20 g (0.7 oz) of grated parmesan (optional)
  • Extra virgin olive oil
  • Salt
  • Black Pepper

Method:

Clean the broccoli and cut them.

Peel the potatoes and cut them into cubes.

In a pot, brown the chopped onion in a thread of oil.

Add the broccoli and cook for a few minutes.

Then add the potatoes and cook for a few minutes.

After that, add the vegetable stock, salt, black pepper, and cook for about 30 minutes.

With an electric blender, whip the mixture.

If the mixture is too thick, add some vegetable stock. Differently, if it results too liquid, boil to evaporate the water. Add the grated parmesan and mix. Your soup is ready!

Serve it with a tread of fresh oil on it!
