Creamy cauliflower soup is one of those dishes that, reading the title, doesn’t make you so much want to taste them, but you haven’t tried my version yet! And if you go beyond the first impression, you will see that it will be one of your workhorses throughout the fall and as long as cauliflower is available on the market.

Creamy cauliflower soup: the quick and easy recipe

What I give you today is a simple, fast and super-appreciated recipe by all of you.

Creamy cauliflower soup is a very light and tasty dish that quickly solves a lunch or dinner at home without having to resort to prepackaged foods.

Cauliflower is a vegetable rich in vitamins and very healthy, which often the little ones (but not only) do not like to eat: with the cream they will change their mind!

There are many ways to cook cabbage, and with this recipe we will prepare a delicious cauliflower cream, excellent all year round and particularly popular on cold winter evenings.

As with any vegetable soup, we will need an immersion blender with which to obtain a nice homogeneous cream.

Some advice

I usually serve the Creamy cauliflower soup  garnished with a drizzle of extra virgin olive oil and croutons.

At the end of cooking, you can also add a spoonful of sautéed mushrooms; or small pieces of provolone that in contact with the hot cream will melt creating a delicious stringy effect!

You can also add pieces of crunchy bacon or pancetta, which makes everything even more delicious and tasty.

Do we want to give the cream a sweeter flavor and a more lively color? We add carrots to the preparation.

If we are looking for more daring flavors, we can add a grind of black pepper, or if we have some flavored oils available, it’s time to use them: spicy oil, truffle oil, will suit us perfectly.

Recipe Difficulty Level: easy Servings: 4

Ingredients:

  • 1 cauliflower (around 740 g)
  • A little bit of black pepper
  • 3 tablespoons of extra virgin olive oil
  • 1 garlic cloves
  • 100 g (3.5 oz) of leeks
  • 730 g (25.7 oz) of potatoes
  • A little bit of salt
  • 30 g (¼ stick) of butter
  • Water

Method:

Clean and chop the potatoes and the leek. Clean and cut the cauliflower into small pieces.

In a pot, melt the butter with two spoons of olive oil.

Add the garlic and cook until it slightly becomes brown.

Remove the garlic and add the leek, the cauliflower, and the potatoes.

Add salt and black pepper and pour some water (the water shall just cover the vegetables).

Cook for 10 minutes, mixing from time to time. Cover it and cook for another 20 minutes on low heat.

Once all the vegetables are cooked, mix them with an electric blender.

Add water if the soup results too dry or let the water evaporate if the soup is too liquid.

The soup is ready,

Serve it warm with a drizzle of extra virgin olive oil and croutons or with a slice of bruschetta bread!
