Recipe Difficulty Level: easy Servings: 4

Ingredients:

  • 600 g (21 oz) of zucchini
  • 200 (7 oz) g of potatoes
  • Half onion
  • 600/700 ml (2½ cups/2¾ cups plus 3 tbsp) of water
  • Basil (or mint)
  • Salt
  • Black Pepper
  • Extra virgin olive oil

Method:

Clean the vegetables. Peel the potatoes. Cut the zucchini and the potatoes in cubes.

Slice the onion, and brown it in a pan with a thread of oil.

Add the potatoes, the zucchini, and the basil (or mint) and cook it for a couple of minutes. 

Add salt and water, cover, and cook it for 20 minutes.

Put the mixture in a blender and whisk it until it becomes a cream. If the cream is too liquid, then keep cooking for a while, if it is too dry, add some water or vegetable stock.

Add some black pepper.

Serve Creamy zucchini soup with a thread of fresh oil, and small rounds of toasted Italian bread (optional).
