Cucumber tomatoes and Avocado salad easy recipe

Cucumber tomatoes and Avocado salad is a very refreshing salad, ideal for the hot summertime. I usually eat it on the beach to keep light and full of energy.

The avocado is not a typical Italian fruit, but in the last years, we started to use it in salads and appetizers.

The avocado, also called ‘alligator pear’ contains healthy fats, important nutrients, and fiber. Studies have shown that eating avocado reduces heart diseases (as it contains monounsaturated oleic acid, a heart-healthy fatty acid) and improve cholesterol and blood triglycerides. It is one of the nutrients that contain more fiber (about 7% by weight) which benefit metabolism and helps with weight loss. Indeed, avocado is rich in potassium, which supports healthy blood pressure levels.

Tomatoes contain vitamins C and K, potassium, and folate. Lycopene is also abundant in tomatoes, which has been linked to a reduction in cancer and heart diseases. Indeed, fresh tomatoes are very low in carbs (containing mainly simple sugars and insoluble fiber) and are appropriate for weight loss.

Some studies also show that eating tomatoes benefits skin health and protects against sunburns. This is the why, maybe, I love to have always a salad with me on the beach with some tomatoes in it!

Cucumbers are also low in calories which help with weight loss, but they also contain important vitamins and minerals essential for our body (especially when eaten with the peel).

They contain about 96% of water which help with hydration and many antioxidants such as flavonoids and tannins which help to reduce free radicals. As cucumbers are rich in fiber, they also help to prevent constipation and increase regularity.

Try this light and ‘beach salad’ and enjoy the topping of fresh lemon, nuts, and olive oil.

Recipe Difficulty Level: super easy

Ingredients:

  • 2 tomatoes
  • 1 avocado
  • Half cucumber
  • Nuts (I usually use pistachios nuts, but you can also use almond, for instance)
  • Fresh juice of half lemon
  • Extra virgin olive oil
  • Salt

Method:

Peel the avocado and cut it into slices. Cut also the tomatoes and the cucumber into slices. Add the nuts. 

Season with Extra virgin olive oil, fresh lemon juice, and salt.
