Asparagus and eggs are a spring dish perfect for those who want to bring a nice and tasty single dish to the table!

Perhaps no other dish like eggs and asparagus manages to celebrate the colors and flavors of spring with such simplicity. A classic second course among Italian recipes is very tasty. 

It can be a perfect vegetarian main course or an excellent appetizer.

Asparagus and eggs are two perfect elements to combine with each other because together they create an incredible combination of flavors.

Furthermore, both are very genuine ingredients with great organoleptic and nutritional properties.

Rich in vitamins, asparagus has important purifying effects and are mainly cooked lightly, steamed, boiled, or in the oven.

Where does asparagus come from?

This typical Italian dish is also called “asparagus alla milanese” because it is a main course of Lombard origin, boasting such a classic preparation that it is also eaten in the rest of the country.

In Lombardy, the territory is very favorable to the spontaneous growth of this vegetable.

The combination of eggs and vegetables is very tasty and nutritious.

Asparagus and eggs is a delicious dish, in fact, in a few minutes, you will bring to the table a simple but rich-in-taste recipe that can be prepared in many different ways.

The recipe is easy: it really takes only a few minutes to bring to the table a wholesome, inviting-looking second course suitable for everyday dinners.

What makes the big difference in this dish, however, is the cooking of the eggs. Scrambled, poached, hard-boiled.

Just be careful also not to overcook the asparagus, which should remain crispy enough to dip without unraveling in the soft yolk, if you like.

Accompanied by a couple of slices of bread, enclosed in a sandwich or in a fancier calzone, eggs, and asparagus becomes a unique dish, perfect even for an office lunch break.

Ps: you can also add Parmesan at the end, but this is absolutely optional. You can serve the asparagus and eggs on lightly toasted bread.

Recipe Difficulty Level: super easy Servings: 4


  • 300 g (10.6 oz) of asparagus
  • 4 eggs
  • 25 g (0.9 oz) of parmesan (optional)
  • Salt
  • Black Pepper
  • Butter


Clean the asparagus (remove the tough and white parts) and cook them in boiling water for 10 minutes.

In a pan, melt a little bit of butter.

Cook the asparagus in the pan for 5 minutes and lay them on a plate.

In the meantime, in another pan, fry the eggs (one at a time).

Once the egg is ready, lay the eggs on top of the asparagus.

Add salt, black pepper, and parmesan on top (optional).
