The recipe is my mom’s, and she has been making it for as long as I can remember. Eggplant and Mozzarella Rolls are super easy, quick to prepare, and can be made in various variations! I usually use long eggplants, which are perfect for rolling into double rounds. If those are unavailable, you can also make them with rounds, adding a slightly more substantial filling. This will result in wider and less thick rolls.

You have the option to grill the eggplant for a lighter, yet flavorful version of grilled eggplant rolls. Alternatively, you can go for the classic recipe, which involves frying the eggplant. If you choose to fry, you can blot the excess oil and avoid adding oil to the tomato sauce. Additionally, you can cook the eggplant roulades in a pan, or bake everything in the oven, creating a delicious gratin crust!

  • 2 long eggplants
  • 125 g (4.4 oz) well-drained mozzarella cheese
  • Fresh basil leaves
  • 300 g (10.5 oz) tomato puree
  • 2 tablespoons of extra-virgin olive oil (use only if you grill the eggplant)
  • 1 clove of garlic
  • 2 tablespoons of grated Parmesan cheese
  • Salt
  • Black pepper

How to make Eggplant and Mozzarella Rolls:

1. In a frying pan, add a drizzle of extra virgin olive oil and a clove of garlic. Sauté the garlic and then add the tomato puree. Season with salt and pepper and cook over medium heat, with a lid, for about 15 minutes. If the sauce becomes too thick, add a drop of water, or if it’s already at the desired consistency, cook over high heat for a few minutes.

2. Meanwhile, wash the eggplants, and using a sharp knife or mandoline, slice them from the long side to a thickness of about 4 to 5 mm. The thickness is crucial to prevent the eggplants from sticking to the bottom of the grill.

3. Heat a grill (cast iron works best) or use a nonstick skillet. Cooking time depends on the cooking surface. For cast iron, about 1 1/2 minutes per side will be sufficient; in a skillet, a little more.

4. As you cook the eggplant slices, place them back on a serving plate.

5. If you prefer frying, heat about 2 fingers of extra virgin or seed oil in a pan, bring it to a boil, fry the eggplant slices for 1 minute on both sides and then drain them on paper towels.

6. Now, cut the drained mozzarella into cubes, and in the center of each eggplant slice, place a basil leaf and a cube of mozzarella.

7. Roll the eggplant slices into a roulade and repeat this process for all the eggplants.

8. Once the sauce is ready, add the eggplant rolls and a few basil leaves. Drizzle some sauce over the surface of the rolls and sprinkle with grated Parmesan cheese.

9. Cook with the lid on for 5 to 7 minutes without turning.

10. The eggplant and mozzarella rolls are now ready to be served!
