Why is this delicious risotto with pumpkin zucchini and sage leaves called Giorgia’s risotto? Well because this is a recipe that my sister Giorgia, who is a very good cook, taught me. One evening she came to my house to see me;

I was thinking about what to cook for her when she proposed to cook for me and made me the risotto with pumpkin zucchini which I immediately fell in love with! I love pumpkin so much, but I never thought how good it tasted with crispy courgettes and sage!

Risotto whit pumpkin, zucchini, and sage leaves, a very colorful and very cheerful combination. It seems an unusual combination due to the fact that these vegetables belong to two different seasons but the freezer is welcome where you can keep the squash squares to be able to delight even out of season with this fantastic risotto.

Risotto with pumpkin, zucchini, and sage leaves is a comfortable recipe, an Italian first course ready to warm us up on cold evenings.

I like to prepare risotto when I have free time, enjoy the slowness of the preparation, and slow, cook it little by little.

I’m used to eating it in front of the TV, with a cover on my legs, watching a TV series that makes me passionate and makes me cry, or one of those romantic English comedies. I am comforted by the warm flavor, the creamy texture, and the feeling that everything can go the right way if I have a bowl full of risotto in my hands.

This risotto whit pumpkin, zucchini and sage leaves is an excellent first course to be able to eat a daily and essential portion of vegetables. Its enveloping embrace and bright colors put you in a good mood on your plate and stomach.

Recipe Difficulty Level: not too tricky Servings: 4

Ingredients for risotto with pumpkin, zucchini and sage leaves:

Ingredients for the broth: (alternatively, you can use the bouillon cube and mix it in hot water)

  • 1,5 l (6 1/3 cups) of water
  • 1 stick of celery
  • 1 onion
  • 1 carrot

Ingredients for the risotto:

  • 320 g (11.3 oz) of risotto (possibly Carnaroli rice)
  • Half onion
  • 500 g (17.6 oz) of pumpkins (or butternut squash) cleaned and pealed
  • 2 zucchini
  • half a glass of white wine
  • 50 g (¼ stick plus 1 tbsp) of butter
  • 80 g (1¾ cups plus 1 tbsp) of grated parmesan
  • Extra virgin olive oil
  • Salt
  • Black pepper
  • 6-8 big sage leaves

Method:

Let’s prepare the vegetable stock.

In a pot, pour water and add the celery, the peeled carrot, and the peeled onion. Boil for about 40 minutes. Alternatively, mix some bouillon cubes in hot water.

In the meantime, peel the pumpkins and cut them into small cubes.

After that, in a pan pour some olive oil, pumpkin cubes, salt, and black pepper.

Add some stock and cook for about 10-15 minutes, until the pumpkin is soft. Smash the pumpkin with a fork.

Clean and chop the sage. Keep apart.

Cut the zucchini into small cubes and cook in a pan with some oil for a few minutes (the zucchini shall remain slightly crunchy). Keep apart.

In a casserole (or a pot) add some olive oil and the chopped half onion. Cook for a few minutes.

Add the rice and cook for a few minutes while mixing it.

When the risotto starts to dry, add some stock to cover the rice.

When the risotto is dry again, add some stock, and so on. The stock shall be added little by little.

When the risotto is almost ready (usually after 15-18 minutes, depending on the rice), add salt and black pepper if necessary.

Once ready, add the smashed pumpkins, the zucchini, the chopped sage, some butter, and the grated parmesan.

Mix with a spoon.

Add some more stock if you would like a creamier risotto.
