Hard-boiled eggs in tomato sauce easy recipe

Hard-boiled eggs in tomato sauce are a simple but really tasty Italian main course! In particular, it belongs to the tradition of Friuli, a region in the north of Italy where they are called ” eggs in funghetto”; as I said, it is a very simple recipe in which hard-boiled eggs become a real comfort food with the addition of a very tasty tomato sauce.

But I will give you a slightly different version of this typical Italian recipe, that of my grandmother Gina! She always prepared this dish for my sister and me when we were little, we loved them, and we still love them very much, so much so that this recipe has become part of our family tradition.

It is a really easy preparation, which is done in a short time, and which becomes a real dinner saver when you are in a hurry and the fridge is empty since very few ingredients are enough!

Recipe Difficulty Level: super easy Servings: 4

Ingredients (in US and EU measurement):

  • 4/6 eggs
  • ¼ of onion
  • 1 or 2 glass of milk
  • 2 tablespoons of tomato paste
  • Salt
  • Black Pepper
  • chopped parsley

Method:

Boil the eggs (put the eggs in cold water and cook them for 10 minutes from the moment the water starts to boil).

Once the eggs are ready, pass them under cold water, peel them, and cut them into two parts.

In a pan, brown the cut onion in a thread of oil.

Add the milk and the tomato paste. Mix it until the tomato paste is melted.

Add the eggs, salt, and black pepper.

Cook it until the sauce become a little bit dense. Add the chopped parsley.

Your meal is ready.
