Today I will explain how to make a perfect homemade pizza!

What I propose is the best and simplest pizza recipe to make at home tested to date!

A few rules, excellent ingredients, and a series of tricks ranging from drafting to cooking are enough and you will get a pizza as good as in a pizzeria!

Thin, slightly crunchy on the bottom, with the classic charred “cornice”, tasty, fragrant but also light and digestible!

So much so that as soon as you bring it to the table, everyone will have a hard time believing that you made it yourself! At home!

This is a very easy recipe for perfecthomemade pizza and within everyone’s reach, once the pizza dough is ready, which you can easily make by hand, just divide the dough into balls and after the necessary rest, roll out the round and thin pizzas.

You can season your homemade pizza as you like: marinara, Margherita, Capricciosa, vegetarian, raw with buffalo mozzarella, and many other flavors that you find in the variants of the pizza filling, satisfying all the family and friends you have for dinner or for lunch!

In this recipe I will give you two cooking methods:

one more homemade, with the classic cooking in the oven, and one with double cooking both in the pan and in the oven. The latter will make your homemade pizza equal to that of pizzerias also in appearance.

A few minutes on the plate and then in the oven at a very high temperature will be enough, which allows the pizza to brown even on the surface!

Below you will find a complete guide, accompanied by illustrated examples, tricks, and tips for making pizza at home as good as you’ve never eaten it before!

In this recipe, I use dry yeast. If you use the fresh one (change the quantity), you will have to modify the initial procedure. You have to dissolve the yeast in the water with the sugar, add the oil, then the flour, and finally the salt.

The best toppings for pizza:

PIZZA MARGHERITA: tomato puree (blended peeled tomatoes mixed with a drizzle of oil), mozzarella, salt, and basil.

PIZZA MARINARA: blended peeled tomatoes mixed with a drizzle of oil, salt, and dried oregano. To add to the red base: fresh garlic cut into slices, dried oregano, oil and optional some anchovy fillets.

PIZZA CAPRICCIOSA: blended peeled tomatoes mixed with a drizzle of oil, salt, and basil. To add to the red base: sliced ​​cooked ham, sautéed mushrooms, artichokes in oil, drained mozzarella, grated parmesan, basil, olives, and oil.

4 SEASONS PIZZA: the same ingredients as the Capricciosa but arranged in 4 quarters that represent the seasons of the year: on the red base, season one wedge with cooked ham and mozzarella, second wedge with sautéed mushrooms or in oil and mozzarella, third wedge artichokes in oil and mozzarella, last slice of olives and mozzarella

DIAVOLA: tomato sauce, mozzarella, basil, grated parmesan, extra virgin olive oil, spicy salami.

WITH VEGETABLES: peeled tomatoes mixed with oil, salt, and basil. On the base, add vegetables cooked in a pan, e.g. mushroom aubergines or grilled aubergines or stir-fried mixed vegetables, drained mozzarella, basil, and oil.

4 FORMAGGI PIZZA: (white base) drained mozzarella, gorgonzola, fontina, toma, (usually among these there is also gorgonzola), basil.

WITH POTATOES: (white base): potatoes cut into thin slices arranged on a bed of diced mozzarella, rosemary, and oil.

BUFFALA MOZZARELLA AND PACHINO: the ingredients are added raw to the cooked pizza or in any case a few seconds before taking it out of the oven. buffalo mozzarella, pachino tomatoes cut into wedges and seasoned with oil and salt, rocket (optional), parmesan flakes, oil, and salt.

Ingredients for homemade pizza:

  • 600 g (5 cups) of flour ‘0’
  • 340 g (12 oz) of water (room temperature)
  • 3.5 g (0.12 oz) of dry yeast (or 12.5 g (o.4 oz) of fresh yeast)
  • 10 g (1 tbsp) of sugar
  • 20 g (0.7 oz) of extra virgin olive oil
  • 15 g (1 tbsp) of salt

Ingredients for the filling:

  • 400/500 g (17.6 oz) of mozzarella
  • 400 g (14.1 oz) of tomato sauce (ideally, passata)
  • Extra virgin olive oil
  • Salt
  • Basil
  • Oregano (optional)
How to make a perfect home made pizza

Methodto make a perfect homemade pizza:

A few hours before starting to prepare the pizza cut the mozzarella into slices.

Drain it in order for the mozzarella to lose the water.

Now, let’s prepare the dough!

In a bowl, add the flour, the dry yeast, and the sugar. Mix.

Add the oil and mix. Little by little, pour the water (room temperature) and keep mixing (if necessary add a little more water). At the end add the alt and mix. 

On a floured working plan, knead the dough until it becomes smooth and compact.

Transfer the dough to an oiled bowl and cover it with plastic wrap (should adhere to the border of the bowl to be well closed).

Leave it for at least three hours in the oven. The oven should be turned off, but the internal light of the oven shall be on. The dough is ready once it becomes double or triple.

On a floured working plan, divide the dough into balls (6 small or 4 normal size). Leave them on the working plan for another 30 minutes and pose on top of it some plastic wrap.

In the meantime, let’s prepare the filling!

In a bowl, add the tomato sauce (possibly, passata), salt, oregano (optional), and a little bit of oil. Mix.

Take the dried mozzarella and add a little bit of salt to it.

After 30 minutes take the dough balls.

Spread out each dough ball starting from the center in order to obtain round pizzas. 

First cooking method:

Oil a baking try and lay the pizza on it.

Add the tomato sauce and the mozzarella that you have previously prepared.

Add a drop of extra virgin olive oil.

Cook in a preheated oven (maximum temperature) for about 10 minutes.

Place the baking tray at the very bottom of the oven (not on the shelf, but in direct contact with the oven).

Second cooking method (the result is more similar to the pizza you eat in the Pizzeria):

Heat a flat pan on high fire (Note that the pan should also be used in the oven so it should not have any plastic part and be a specific pan to be used on the fire and on the oven).

Once the pan is hot, position on it the pizza dough.

While on the fire, add the tomato sauce, the mozzarella, and a drop of oil. Cook for 1 – 1,5 minutes, until the base of the pizza slightly starts to become gold.

Transfer the flat pan to a pre-heated oven (maximum temperature). The pan should be placed in the highest part of the oven.

Cook for about 4/5 minutes.

Remember to control the baking by rising it a little bit the pizza and check the base as every oven is different.

You fill the pizza as you prefer, with vegetables or ham. Give space to your creativity!
