Breaded Eggplant cutlets are a side dish or a vegetarian main course that my sister Giorgia taught me, for those who have been following me for a long time knows that she is an excellent cook and that she passes me many recipes.

Before tasting this dish I never imagined it was so good! Prepared with a few simple ingredients, these Breaded Eggplant cutlets are one of those dishes that are hard to resist!

These Eggplant Cutlets are perfect to serve as a second course if you have vegetarian guests, they are excellent to replace the classic Chicken Cutlet, even to fill sandwiches!

Breaded Eggplant cutlets: the easy and tasty recipe

Delicious, original, and tasty, these eggplant cutlets are definitely among the eggplant recipes you must try.

The extremely simple preparation will allow even those who have little time to be able to devote themselves to more delicious preparations and bring to the table dishes that everyone really likes. In particular, this dish will be perfect for those who do not like vegetables and therefore are looking for solutions to be able to eat them with more taste.

Breaded Eggplant cutlets are a very tasty and particular Italian dish, which if cooked in the oven, will also allow you to limit the intake of fat since they are cooked in the oven.

Delicious and original variant:

To make them, all we have to do is slice the aubergines in order to obtain slices of uniform thickness. From those, we need to create small turrets. A slice of aubergine with a pinch of salt, a little cooked ham and smoked cheese, then another slice of aubergine.

At that point we proceed with the breading: first, we pass them in beaten eggs with a little salt, then in a mix of breadcrumbs, cheese, parsley, and salt. We proceed with a double breading and they are ready to cook and serve!


This same recipe is suitable for different cooking and we can choose the one you prefer. I propose two: the first, very convenient, in the oven, and the second fried in oil.

How to serve eggplant cutlets

We can consider the Breaded Eggplant cutlets as a second alternative to the classic meat-based cutlet. As such they are perfectly served with a nice salad or with Potato Puree as my sister likes!

Recipe Difficulty Level: easy Servings: 4


  • 2 eggplants
  • 2 eggs
  • Bread crumbs
  • Vegetable oil (if you want to fry them)
  • Salt
  • Flour
  • Extra virgin olive oil


Clean and peel the eggplants. Cut in slices of 1 cm.

Coat in flour the slices. Then coat the slices in a whipped egg. Finally, coat them in bread crumbs.

Now you can decide how to cook your eggplant steaks. I give you two methods:

In the oven or fry them in the pan.

Baking in the oven:

In a baking tray, lay parchment paper. Grease with olive oil and lay the slices.  Put a drop of oil on top of the eggplant slices.

Cook for about 20/25 minutes at 200 C (390° F) (remember to turn the slices after about 15 minutes). Salt it.


In a pan pour vegetable oil (you need to pour a lot of oil to fry them. The quantity depends on the size of your pan).

When the oil is hot, fry them for about 10 minutes (or until golden) and lay them on blotting paper to remove the oil in excess. Salt it.

Eat them with potatoes pureè or with a nice salad!
