Recipe Difficulty Level: easy

  • 2 zucchini
  • 120 g (4,2 oz) cooked ham
  • 120 g (4,2 oz) mozzarella for pizza
  • Extra-virgin olive oil
  • Breadcrumbs
  • Salt
Baked zucchini rolls with ham and mozzarella, video recipe

1. First, thinly slice your zucchinis with a mandoline or knife to a thickness of 3mm.

2. Coat them in oil on both sides and finally breadcrumb them.

3. As you make them, place them on a baking sheet lined with parchment paper. Add salt to taste for flavor.

4. Bake in a preheated oven at 180° C (356 F°) degrees for 20 minutes.

5. Stuff each zucchini slice with prosciutto and mozzarella previously salted and cut into zucchini-sized slices (if you have not found pizza mozzarella, I recommend cutting and letting the mozzarella drain for about an hour so that it loses its water).

6. Gently roll up, forming a small roll. Transfer the rolls to a lightly oiled baking sheet. Bake in a hot oven at 180° C (356 F°) for another 10 minutes or until golden brown.
