A Culinary Journey with Zucchini

If you’re familiar with my culinary journey, you know my enduring passion for this versatile vegetable, offering a canvas for a myriad of recipes. From the timeless Baked Zucchini to the heartwarming Zucchini Meatballs with a stringy core, the delightful Zucchini Rolls with Cured Ham and Spreadable Cheese, and the legendary risotto with pumpkin zucchini and sage leaves, Zucchini pesto, each rendition is met with resounding success. This time, my culinary imagination led me to bake zucchini rolls with ham and mozzarella—a quick and straightforward preparation that demands minimal time and effort.

Crafting Baked Zucchini Rolls with Ham and Mozzarella

Opt for long green zucchini, slice them uniformly with a mandoline, coat them with a touch of oil, and generously breadcrumb them. The key lies in a brief stint in the oven to soften the slices before embarking on the stuffing adventure. In this instance, I opted for a filling of savory ham and gooey mozzarella, but the possibilities are endless. Explore variations by stuffing them with an array of vegetables, an assortment of cheeses, leftover cold cuts, and olive paste, or venture into the realm of zucchini and tuna rolls.

Roll them up, a quick bake in the oven, and they’re ready to grace your table! 1. First, thinly slice your zucchinis with a mandoline or knife to a thickness of 3mm.

2. Coat them in oil on both sides and finally breadcrumb them.

3. As you make them, place them on a baking sheet lined with parchment paper. Add salt to taste for flavor.

4. Bake in a preheated oven at 180° C (356 F°) degrees for 20 minutes.

5. Stuff each zucchini slice with prosciutto and mozzarella previously salted and cut into zucchini-sized slices (if you have not found pizza mozzarella, I recommend cutting and letting the mozzarella drain for about an hour so that it loses its water).

6. Gently roll up, forming a small roll. Transfer the rolls to a lightly oiled baking sheet. Bake in a hot oven at 180° C (356 F°) for another 10 minutes or until golden brown.

Enjoy! Buon appetito!
