How to make Eggs and Peas – Easy recipe

Eggs and peas is a typical Sicilian recipe, but now prepared throughout Italy.

It is a traditional recipe, easy, nutritious, and tasty.

In fact, I only started preparing it a few years ago, because I didn’t know this recipe, then one day, talking to my aunt Armanda, she suggested this dish and since then I have been making them very often, especially when I’m tired and I don’t have much desire to cook but still eat something tasty!

Eggs and peas are a dish quick and easy to make, it is perfect, as I told you, to prepare when you have little time and there is not much left in the kitchen, plus it will be appreciated by young and old!

Perfect even if you have vegetarian guests!

It is a dish made with simple ingredients: eggs and peas. In my recipe, I used frozen peas, but you can also use fresh peas, depending on the season and availability (cooking times will change, however).

Once ready, serve the eggs and peas in sauce, accompanied by a slice of homemade bread: it is in fact a dish in which the shoe is a must. If you like eggs and quick and easy recipes, try the eggs with tomato sauce too! But back to us, let’s see how to prepare eggs and peas.

Recipe Difficulty Level: super easy Servings: 2


  • 400 g (14.1 oz) of frozen peas
  • ½ onion
  • 4 eggs
  • Extra virgin olive oil
  • 250 g (8.8 oz) of vegetable stock or vegetable cube melt in 8.8 oz of water
  • Salt
  • Black Pepper


In a pan, brown in a thread of oil the chopped onion.

Add the frozen peas.

Add the stock, mix, and cover.

Cook for 10 minutes.

Once the peas are soft, add salt and black pepper.

Add the eggs and cover.

Cook it until the egg white is ready (the egg yolk should remain soft).

Your meal is ready! Serve it warm with fresh bread.
