I have not yet met a person in the world who does not love this easy Italian appetizer!

But even if it’s a simple recipe, it doesn’t necessarily have to be done roughly! The batter may seem trivial, but, if you don’t pay attention to doses and consistency, it becomes a real disaster; frying? And what does it take? No: the temperature and the type of oil are essential.

After so many experiments, here I am sharing with you, what I think is the perfect recipe for Fried Zucchini blossoms!

For taste, texture, and lightness! The batter is made in 5 minutes. The secret to a perfect result after gently dipping the Zucchini blossoms in the batter without breaking them; a state-of-the-art frying, a few pieces at a time in boiling oil at a constant temperature! In this way, they will be without excess oil, super crunchy, and golden!

From this basic version of Fried Zucchini blossoms, you can also decide to stuff them with anchovy and mozzarella or ricotta before frying them!

They will be a marvel! Excellent hot to serve between appetizers, as finger food for aperitifs, perhaps accompanied with an excellent Italian cold prosecco!

  • 15-20 zucchini blossoms

Ingredients for the batter:

  • 50 g (⅓ cup plus 1 tbsp) of flour (‘00’)
  • 50 g (⅓ cup) of rice flour
  • 150-175 ml (¾–⅔ cups) of cold sparkling water

Ingredients to fry:

  • 1 l (4 cups plus 3 tbsp) of peanut oil


Clean the Zucchini blossoms: you can open the flower completely, or even at the opposite end of the petals. Remove the flower from the courgette.

Gently remove the closed end, also including the pistil inside. It will come off very easily.

Unfold the petals well and voilà, ready Zucchini blossoms!

Now, let’s prepare the for the zucchini blossoms

In a bowl, pour the sparkling water and add the two kinds of flour.

Whip until you obtain a homogeneous mixture.

Warm the oil in a pot until it reaches 175 C (347 °F).

Once the oil is hot, submerge the zucchini blossoms in the batter and then fry them in the oil for about 2 minutes.

I suggest you not fry more than 3 zucchini blossoms at a time to have more space to fry them properly.

Once they are gold, take them out and pose them on a paper of paper towel.

Serve them warm.
