Healthy Cream of asparagus soup easy recipe

Cream of asparagus soup is a healthy and tasty dish. An easy, light and spring!

Served warm and in small portions, cream of asparagus soup can be a very chic appetizer for a dinner, or as a first course with a soft and delicate flavor, enriched by the crunchiness of the croutons.

To make it, it takes a few ingredients and a short time, and it is therefore a time-saving dish, as well as being a healthy recipe and suitable for adults and children.

The best way to serve cream of asparagus soup is natural, with a drizzle of extra virgin olive oil and some croutons, but you can also add a basil leaf, which will enrich everything with a fresh and typically summer flavor.

Recipe Difficulty Level: easy Servings: 3/4

Ingredients:

  • 600 g (21 oz) of asparagus
  • 150 g (5.2 oz) of potatoes (1 medium potato)
  • About 800 ml (3⅓ cups plus 1 tbsp) of vegetable stock
  • Half onion (optional)
  • 2 tablespoons of extra virgin olive oil
  • Salt
  • Black Pepper
  • 2 slices of club sandwich bread
  • Extra virgin olive oil to prepare the small rounds of toasted Italian bread (to accompany with the soup- this is optional)

Method:

Clean the asparagus and remove the hard parts.

Cut the asparagus into small pieces and keep apart 7-8 asparagus tips.

Peel and cut the potato into small cubes.

Chop the onion and brown in a thread of oil.  

Now, add the asparagus and the potatoes.

Cook for a minute and add the vegetable stock.

Cook the asparagus tips in a place to be located on the top of the pot.

Cover it and cook on medium heat for 15 minutes (the asparagus tips should be cooked for only 5 minutes).

Once the asparagus and the potatoes are ready, add salt, and whip the mixture with a blender in order to obtain a cream. If the cream is too liquid, then keep cooking for a while, if it is too dry, add some water or vegetable stock. Your soup is ready!

Serve it with a thread of fresh oil and small rounds of toasted Italian bread (optional).
