Recipe Difficulty Level: easy Servings: 4

Ingredients:

  • 1 carrot
  • Half stick of celery
  • 1 small onion
  • A little bit of extra virgin olive oil
  • 1 garlic clove
  • 1 potato
  • 400 g (14 oz) of black cabbage
  • Salt
  • Water
  • 150 g (5.2 oz) of white beans (cannellini beans in the can)
  • Hot chili pepper (optional)

Method:

Clean the carrot, the celery, and the onion and cut in small cubes.

Peel the potato and cut into small cubes.

Clean the cabbage. Eliminate the stick and cut the leaves into small pieces.

In a pot, brown the chopped carrot, celery, and onion in a thread of oil for a few minutes.

Add the chopped potato and cook for a few minutes.

Add the chopped cabbage, add salt and enough water to cover the vegetables, cover and cook for 50 minutes.

If the mixture is too thick, add some vegetable stock. Differently, if it results too liquid, boil to evaporate the water.

When the cabbage starts to be soft, add the beans and the hot chili.
