Potato gnocchi are a basic preparation typical of Italian cuisine; a mixture of boiled potatoes, egg and flour, from which round-shaped and variable-sized morsels are made: small gnocchi usually smooth, or larger the classic Gnocchi rigati; which are first boiled in boiling water and then seasoned with sauces and gravies! A real goodness!!

The secret to a perfect result ofPotato gnocchi is to choose old potatoes, floury and rich in starch, this will allow you to obtain a non-watery dough that requires little flour! Remember that the less flour you add to the gnocchi, the softer they will be!

Another important thing is to make thePotato gnocchi and cook them immediately or to place them lying on a floured tray and put them in the freezer; once frozen you can put them together in a bag. When you want to eat them you just have to throw them in boiling water directly frozen.

How to make potato gnocchi video recipe

Ingredients forPotato gnocchi:

  • 1000 g (35.3 oz) of potatoes (better if old)
  • 300 g (10.5 oz) of flour (‘00’)
  • 1 egg

Ingredients for the gnocchi sauce:

  • Half onion
  • 2 tablespoons and half of tomato paste
  • 60 g (2.1 oz) of butter
  • 2 tablespoons of extra virgin olive oil
  • 1 glass of water
  • A little bit of salt


Let’s prepare the sauce:

In a small pot or casserole, melt the butter. Add extra virgin olive oil, chopped onion and cook on low heat until the onion becomes transparent.

Dilute the tomato paste in a glass of water and pour in in the pot. Add salt. Cover and cook on low heat for about 2 hours, mixing from time to time (add water if the sauce becomes too dry). The sauce should not thicken too much but remain liquid enough.

Let’s prepare the gnocchi: 

Boil the potatoes with the skin. Once soft and well cooked, peel the potatoes while they are still warm. Smash the potatoes, lay on a wooden surface and let it cool down.

Add the flour and the egg and mix with a fork. Knead until the dough becomes homogenous and create a dough ball.

On a floured surface, cut a piece of dough and form a snake shape (2-3 cm (1 Inches) tick). Cut it in smaller pieces (2-3 cm (1 Inches) long).

Pass each piece on the top of a fork, pressuring a little bit with your finger (this will create strips in the gnocchi, which will allow the sauce to better amalgamate). 

Lay the gnocchi on a paper tray with a little bit of flour.

Once the gnocchi are ready, they have to be cooked immediately. You can also frozen gnocchi. Put them in the freezer on the tray (they have not to attach to each other): once they are frozen you can take them out and out in a bag (and put back in the freezer or cook them immediately).

How to cook gnocchi:

Boil the water in a big pot. Once the water boils, add salt and the gnocchi. Mix them slightly with a wooden spoon. Gnocchi are ready when come to the surface. Drain them with a skimmer and add sauce and parmesan. Mix it.
