How to make Italian Minestrone Soup

Minestrone Soup: the word alone brings to mind the scent of genuine things, of happy moments and family warmth.

The recipe for Minestrone Soup is in fact one of the many typical Italian recipes that is handed down from family to family, which we have all prepared at least once in our life and which, precisely because it is a traditional recipe, everyone prepares in his own way.

Minestrone Soup is the healthy and light dish par excellence, the comfort food that warms up on cold winter days.

There are many variations, especially it is possible to add many types of vegetables to your Minestrone Soup, according to your taste, the availability of the moment and the seasonality of the vegetables. In all cases, at the base of the soup there is always a sauce prepared with celery, onion and carrot to be browned in oil and to which then add water and all the other vegetables.

Sautéed is one of the elements on which traditions often diverge: it is in fact not uncommon to savor minestrone with sautéed pork lard to which celery, onion and carrot are added and almost always also cubes of bacon, for a more decisive flavor and certainly more calories.

Balanced from a nutritional point of view, the Minestrone Soup is also very greedy, pleasant to taste accompanied by croutons, sprinkled with Parmesan cheese and enriched with a drizzle of raw oil. I confess that I love it and on cold winter evenings I would eat only that!

How to preserve the minestrone:

It keeps perfectly in the fridge for 1-2 days, but my advice is to freeze it: after having done it adequately cool, portion it in special airtight containers. You will have portions of Minestrone Soup always available.

For the little ones, who do not like whole pieces and / or have difficulty swallowing them, you can blend yourMinestrone Soup or part of it with the help of a mixer, creating a delicious Vegetable Puree.

Before moving on to the recipe for Minestrone Soup, a small consideration necessary for this recipe: minestrone is a real exercise in imagination. Once you have acquired the basic recipe, you can play with the ingredients in order to create a personalized and unique dish.

Recipe Difficulty Level: easy Servings: 4

Ingredients forMinestrone Soup:

  • 150 g (5.3 oz) of white cauliflower
  • half leek
  • 1 stick of celery
  • 2 potatoes
  • 100 g (3.5 oz) of spinach
  • 1 can of beans
  • 1 onion
  • 2 zucchini
  • 1 carrot
  • 1 can of peas
  • water
  • Salt
  • Black Pepper
  • Extra virgin olive oil
  • Parsley (optional)
  • Parmesan

Method:

Chop all the vegetables. In a pot, pour two spoons of extra virgin olive oil and slightly brown the chopped onion, carrot, and celery.

Add all the other vegetables and water (enough to cover the vegetables in the pot).

After that add salt and black pepper. Cook for 40/50 minutes. 

Now add the beans and peas, and cook for other 5 minutes.

Add water if the soup results too dry or let the water to evaporate if the soup is too liquid.

Once ready, add some fresh chopped parsley and black pepper (you can also add a little bit of fresh extra virgin olive oil).

Your Minestrone soup is ready!

Serve with parmesan and croutons (optional).
