It’s a really yummy vegetarian dish, a super tasty way to prepare broccoli that the whole family will love.

It involves blanching the broccoli florets, boiling the potatoes, adding eggs, Parmesan cheese, and mozzarella cheese, and bringing everything together in an ovenproof dish.

Potato and broccoli casserole is cooked in the oven and the result is a very tasty flan to be eaten piping hot.

It is a dish prepared with just a few ingredients and you can use it as a hot appetizer or as a main course, although, to be honest, it is a true one-pot meal, containing potatoes, broccoli, and cheese, so it is perfect for a quick lunch or dinner!

The sweetness of the potatoes, boiled and mashed, combines with the creaminess of the broccoli: together they create a recipe that is guaranteed success. The addition of diced mozzarella, parmesan cheese, and breadcrumbs on the surface will make it stringy and perfectly golden.

Quick and easy to make, here is one of those dishes that will solve dinner (or lunch) in no time: you can even prepare it in advance, reheat it just before bringing it to the table and serve it as an appetizer, main course or single dish to the whole family. Recipe Difficulty Level: easy

Ingredients (in US and EU measurement):

  • 1 broccoli
  • 3 medium potatoes (around 17.6 oz)
  • 1 mozzarella cheese
  • 3 tablespoons of grated parmesan
  • 1 egg
  • Salt
  • Black pepper
  • Extra virgin olive oil
  • Bread crumbs


Cut the broccoli florets and cook them in boiling salted water until tender (about 10 minutes). 

Drain and mash them with a fork. Set them aside.

Place the potatoes in a pot with cold water. Turn on the heat and cook until the potatoes become soft (check by poking a fork into the potatoes).

Once ready, drain them. 

Peel and smash the potatoes, add salt and black pepper, and let them cool down.

In a bowl, add the mashed potatoes, the egg, the diced mozzarella cheese, the grated parmesan, and the broccoli, and mix.

Grease a baking tray (with high edges) with extra virgin olive oil, and add some breadcrumbs. 

Put the mixture in the tray and level it with a fork. 

Add breadcrumbs on top of it and pour some extra virgin olive oil.

Cook in a pre-heat oven at 200 C (390° F) for 30 minutes, until the surface, is golden.

Once ready, let it cool down for at least 30 minutes.
