Potato salad is a tasty and delicate side dish to be prepared in all seasons. It is a single cold dish based on boiled potatoes, goes well with a main course of meat or fish.

Potatoes are one of the most filling food, as they increase the level of cholecystokinin (‘the fullness hormone’), loved by both adults and children, but they are very healthy and digestible.

They are rich in vitamins and minerals. They also contain resistant starch which reduces insulin resistance and improve blood sugar control. Resistant starch also helps gut bacteria by converting it into acid butyrate, which is associated with a reduction of colon inflammation, reducing the risk of colorectal cancer. Potatoes contains antioxidants which deeply reduce the risk of heart disease, diabetes and certain cancers. Eating potatoes with the skin will help to preserve all these nutrients. More importantly, potatoes are gluten-free, and they represent a good food choice for celiac people as well as for non-celiac gluten sensitivity.

Cucumbers are also low in calories which help with weight loss, but they also contain important vitamins and minerals essential for our body (especially when eaten with the peel). They contain about 96% of water which help with hydration and many antioxidants such as flavonoids and tannins which help to reduce free radicals. As cucumbers are rich in fiber, they also help to prevent constipation and increase regularity.

What give a particular taste to Potato salad is the dressing. I do use some mustard, white vinegar, black pepper, salt, extra virgin olive oil, and parsley to give a particular flavor to the vegetables I have used.

Recipe Difficulty Level: super easy

Ingredients forPotatoes Salad:

  • 700 g (24.7 oz) of potatoes
  • 1 cucumber
  • 1 onion
  • ½ tablespoon of mustard
  • 1 tablespoon of white vinegar
  • 3 tablespoon of extra virgin olive oil
  • Salt
  • Black pepper
  • Parsley


Wash the potatoes well and boil them for about 40 minutes. Dry and let cool down. Peel them and cut into slices. 

Cut the cucumber and the onion in thin slices. Chop the parsley. 

Mix everything in a bowl and season with mustard, white vinegar, salt and pepper.
