How to make Salt-Crusted Sea Bass 

Salt-Crusted Sea Bass is a very tasty and simple second course to make. It is a perfect recipe for those who have difficulty or have hesitations in preparing fish. Often, in fact, we worry about ruining it by cooking it excessively or not cooking it enough, ending up not preparing it at all.

It is a very healthy, light, and dietary course as cooking with salt does not require the use of any type of fat. Inside the salt crust, the transmission of heat occurs slowly and its escape is also slow; this allows the fish to remain juicy and very tender, thus avoiding drying out and becoming stringy. The steam that forms also allows the sea bass to cook evenly.

You can use the salt without adding anything else or you can enrich it with aromas so that these, with the heat, release their aromas. For example, lemon zest, pepper, orange zest, or chopped herbs to taste.

Pay attention that the fish is always completely covered by salt and when breaking from the crust, be careful not to ruin the sea bass.

Cooking times depend on the size of the fish, consider 25 minutes for 500 g (17.6 oz) of a single sea bass, for this reason, if you need to cook more fish, choose them as similar as possible to each other.

Have the sea bass gutted by the gills, thus avoiding cutting the belly, in this way, the salt will not penetrate inside.

I often accompany Salt-Crusted Sea Bass with a parsley sauce. In the glass of the mixer, I add parsley, salt, and olive oil and blend until a sauce is obtained which I then place next to the cooked and cleaned fish; try it, it’s really yummy!

  • 4 medium sea bass
  • 2 kg (70.6 oz) of coarse salt
  • 4 slices of lemon


Clean the sea bass and keep them apart.

On a tray, add 1 kg (35.2 oz) of coarse salt. Spread it in the bottom of the tray to cover it all. Splash a little bit of water on the salt (this will render the salt more compact). 

Lay the 4-sea bass in the tray, on top of the layer of salt.

Add the rest of the salt. Remember that the fish shall be totally covered by the salt. Splash a little the of water on top of it.

Cook at 240 C (464 °F) for about 40 minutes. Once ready, take it out and break the salt layer. Take out the sea bass and serve them.
