How to make Sandy Potatoes 

Sandy Potatoes are a really good side dish!

It is a very easy and quick recipe, a different version of the classic baked potatoes! These are potato wedges first blanched for a few seconds, then dipped in a coating of breadcrumbs, salt, and herbs; finally cooked in the oven with a drizzle of oil. This will form a crisp “sandy” crust that will make your potatoes amazing!

The secrets for a perfect result are: cut the potatoes of the same size so that they cook evenly and dip them in the breading when they are hot so that the mixture adheres perfectly to the potatoes! Depending on your needs, you can choose to make your own sandy potatoes in the oven, or sandy potatoes in a pan that are equally crunchy and appetizing! Excellent both hot and cold! To accompany all dishes: from roasts to fish and cheeses! Even children love them and they are an excellent alternative to both classic baked potatoes and delicious pan-fried potatoes. Recipe Difficulty Level: easy Servings: 4


  • 1 kg (35.2 oz) of potatoes
  • 4 tablespoons of breadcrumbs
  • Rosemary
  • Salt
  • Extra-virgin olive oil


Peel and clean the potatoes and cut them into segments. 

In a big pot, boil a big quantity of water.

In the meantime, in a bowl, add the breadcrumbs, salt, and ground rosemary.

When the water boils, add the potatoes and cook them for 3-4 minutes.

Drain the potatoes and put them in the bowl with the breadcrumbs, salt, and rosemary.

Move the bowl in order to distribute the breadcrumbs.

In a tray covered with baking paper, add the segments of potatoes one next to each other (not on top of each other). Add rosemary and a thread of oil.

Cook it in a preheated oven at 200 C (392 °F) for 30-35 minutes. Then cook it on the grill for 5-6 minutes and your potatoes are ready! Buon appetito!
