The secret to getting baked potatoes that are crispy on the outside and soft on the inside is to boil them for a few minutes in salted water; another trick is to put them in the oven and do not touch them until they are golden brown, only at that point you can mix them. Recipe Difficulty Level: easy


  • 1000 g (35.2 oz) of potatoes
  • Half onion
  • Salt
  • Rosemary
  • Extra virgin olive oil
  • Sage


Grind the salt, rosemary and sage (you can prepare a big portion and keep in the fridge in a glass can).

Clean and peel the potatoes. Cut in cubes of bout 2 cm (0.8 Inches).

In a big pot of salty water, boil the potatoes cube for 3/4 minutes (if you have little time, you can boil the potatoes for longer).

Drain the potatoes and lay them on a rug to dry them a little bit.

Dampen slightly the oven paper and cover with it a baking tray.

Chop the onion. Put the potatoes and the onions on a baking tray and sparkle the mix of salt and herbs. Add rosemary and extra virgin olive oil.

Cook on pre-heat oven at 180/200 C (374 °F) for 40-50 minutes. It is very important not to mix the potatoes during the baking.

Only when the potatoes start to become gold, then you can gently mix them.
