Recipe Difficulty Level: easy

  • 250 g (8.8 oz) of kidney beans (in the can)
  • 40 g (1.4 oz) of rice (better if whole)
  • 1 medium zucchini
  • 2 carrots
  • Half red pepper
  • 1 onion
  • 1 egg
  • Parsley
  • Breadcrumbs
  • Salt, black pepper, and paprika
  • Extra virgin olive oil

Boil the rice. Once ready, keep them apart. With an electric blender, mix the onion and the pepper to obtain a kind of dense cream.

In a pan, cook for a few minutes this cream with a little bit of water and oil.

Chop with an electric mixer the zucchini and the carrots and keep them apart. Mix the beans until you obtain a creamy compost.

In a bowl, mix all the mixed elements. Add one egg, chopped parsley, salt, black pepper, and paprika. Mix with a spoon.

The compost will be a little bit soft, and for this reason, it is necessary to add some breadcrumbs (3-4 tablespoons). Put the compost in the fridge for 1 hour.

After that, take the compost and with your hands, shape the hamburgers (with the quantity proposed, you can have about 10 medium hamburgers).

Cook them in a pan with a little bit of oil for a few minutes on each side.

You can simply accompany them with fresh vegetables or take the burger bread and stuff it with our Beans Veggie Burger, sauces, vegetables, and cheeses of your choice!

Enjoy! Buon appetito!
