The first courses based on fish are always delicious and are prepared in a few steps because the cooking times of the fish are almost always very fast.

To prepare this tasty first course it will take just 20 minutes: while we wait for the pasta water to boil, we will prepare the sauce by cooking the tomatoes, olives, and fresh tuna together in a sautéed garlic in a pan, after which we will just have to drain the pasta. al dente and pour it into a pan to allow it to flavor for a few minutes.

Pasta with fresh tuna fish cherry tomatoes and olive is really delicious and, if we prefer a more intense flavor, we can enrich it with capers and chili. Regarding the shape and type of pasta, I have to use paccheri which are perfect for this dish, but you can also use penne or linguine.

We recommend enjoying this dish on the spot, beautifully steaming, and accompanying it, if we like, with a glass of fresh white wine. You will see what goodness! Ingredients:

  • 400 g (14 oz) of pasta (paccheri, penne, linguine)
  • 200 g (7 oz) of fresh tuna fish
  • 350 g (2 cups plus 2 tbsp) of cherry tomatoes
  • 50 g (⅓ cup plus 1 tbsp) of olive
  • Half glass of white wine
  • 1 clove of garlic
  • Half grated lemon skin
  • Salt
  • Black pepper
  • Extra virgin olive oil
  • Basil
  • Parsley (optional)
  • 1 fresh hot chili pepper (optional)

Method:

In a pan, brown the chili pepper and the garlic in a bit of oil. In the meantime, cut the tune fish in pieces. 

Once the garlic starts to become brown, eliminate it, along with the chili pepper.

Add the tuna fish and cook for a few minutes on high heat while mixing with a wooden spoon.

After that, add the wine and cook on high heat until it completely evaporates. 

Clean and cut the cherry tomatoes in half, add them to the sauce, in the pan.

Cook on low/medium heat for 15/20 minutes (if it becomes too dry, add some water used to boil the pasta). Add olive.

Boil the pasta in salty hot water. Before draining the pasta, take a glass of water where the pasta is boiling.

Drain the pasta 2 minutes before the indicated time (in order to finish the cooking in the pan) and put it in the pan, add some cooking water, and cook for a few minutes on high heat (if it’s too dry, add some cooking water).

Add black pepper, basil, chopped parsley, and grated lemon skin.
