How to make Pasta with pepper cream – easy recipe

Today I propose you pasta with pepper cream, a quick and colorful first course.

It is a very simple but good recipe, which is prepared with few ingredients!

If you don’t like ricotta, don’t worry, you can prepare this dish even without it, adding a little cream or just a little pasta cooking water to make the sauce creamy.

With the arrival of summer, you want to enjoy quick dishes with seasonal vegetables, such as peppers, with their bright colors and intense flavor they bring a truly tasty dish to the table.

Recipe Difficulty Level: easy Servings: 4

Ingredients for pasta with pepper cream:

  • 350 g (12.3 oz) of pasta (better ‘short’ pasta)
  • 2 red peppers
  • 100 g (3.5 oz) of ricotta
  • 100 ml (⅓ cup plus 1 tbsp) of milk
  • Grated parmesan
  • Half onion
  • Parsley
  • Extra virgin olive oil
  • Salt


First, in a big pot, boil the water where you will then cook the pasta.

In the meantime, clean the peppers and cut them in pieces

Then, in a pan, brown in a thread of oil chopped onion.

Add the peppers and brown them for a couple of minutes.

Add a little bit of salt and two big spoons of water and cook for about 8 minutes, while mixing from time to time.

When the peppers are cooked, put the mixture in a food processor.

Add the ricotta and the milk and whip it in order to obtain a cream.

Pour the cream of peppers into the same pan where you have previously browned them.

Now, drain the pasta and put it in the pan. Mix it with a spoon.

Your meal is ready! Just add a little bit of fresh parsley which will render the dish more colorful and tastier.
