How to make Piadina Italian flatbread sandwich

Piadina, (Italian flatbread sandwich) also called piada, is a typical Italian dish, typical of the gastronomic tradition of Romagna; a flatbread sandwich without leavening made with flour, water, lard.

It is a typical street food symbol of Italian cuisine in the world, perfect to be stuffed with cheeses and cured meats or to be used instead of bread!

It is a very simple preparation with few ingredients. Then it is kneaded, the loaves are obtained, finally, they are spread out in disks and the wraps are cooked one by one! Today I propose a variant of the classic Piadina, without lard with extra virgin olive oil! the result believe me is a perfect Piadina!

Just like the Tigelle or the gnocco fritto, the piadina is excellent to be stuffed with any condiment you like! From the classic “squacquerone” to raw ham.

Recipe Difficulty Level: easy Servings: 4


  • 200 g (1⅔ cups) of flour ‘00’
  • 100 g (⅓ cup plus 1 tbsp) of water
  • 25 g (1 tbsp plus 2 tsp) of extra virgin olive oil
  • 3 g (1 tsp) of salt
  • A little bit of baking soda


In a bowl, add the flour and make a hole in the middle where you add salt, baking soda, water, and oil. Knead it until you obtain a homogeneous compost. Let it rest (wrapped in transparent food wrap) for 30 minutes at room temperature.

Divide the dough into four parts.

Spread the dough with the help of a rolling pin giving it the shape of a circle.

Cook in a pan at medium heat on both sides.

Your piadina is ready.

Now, fill it as you like!

Some suggestions to fill the piadina:

  • Parma ham, soft cheese and arugula
  • Avocado, tomatoes, grilled zucchini, and artichoke cream
  • Turkey sliced meat, mushrooms, arugula, olives
  • Try also the piadina with Nutella!
