Recipe Difficulty Level: easy

Ingredients:

  • 280 g (9.8 oz) of green beans 
  • 3 medium potatoes (around 500 g)
  • 1 egg
  • Some Majorana (optional)
  • 3 tablespoons of grated parmesan
  • Salt
  • Black pepper
  • 1 medium onion and a clove of garlic
  • Extra virgin olive oil
  • Bread crumbs

Method:

Clean the green beans, eliminating the ends. Peel the potatoes and cut them into pieces.

Boil the potatoes and the green beans separately, dipping them in cold water and cooking them. Once ready, drain them. 

Smash the potatoes, add salt and pepper, and let them cool down.

Cut the green beans into small pieces. Finely chopped the onion. In a pan, brown the onion and the garlic in a spoon of Extra virgin olive oil.

Add the beans and cook for 2-3 minutes. Add salt and Majorana. 

In a bowl, add the mashed potatoes, the egg, the grated parmesan, and the green beans, and mix.

Grease a baking tray (with high edges) with olive oil, and add some breadcrumbs.

Put the mixture in the tray and flatten with a fork.

Add breadcrumbs on top of it and pour some Extra virgin olive oil.

Cook in a pre-heat oven at 200 C (390° F) for 30 minutes, until the surface, is golden.

Once ready, let it cool down for at least 30 minutes.
