How to make a delicious Potato and Pepper Pie

Potato and Pepper Pie is a very quick and easy recipe to prepare that my mom, the legendary Lilli, taught me!

It has a base made of puff pastry with a filling of leeks, potatoes, and red pepper which makes this quiche really tasty.

Potato and red Pepper Pie is excellent both hot and cold and is ideal for a picnic. It also lends itself to being served as a tasty appetizer, also appreciated by any vegetarian guests.

The recipe, being very simple, is within everyone’s reach, even the less experienced in the kitchen, in fact it will be enough to boil the potatoes, sauté the vegetables in a pan and once cold add the Parmesan, then all that remains is to stuff the puff pastry and cook all in the oven.

But now let’s see how to prepare Potato and Pepper Pie!

Recipe Difficulty Level: easy

Ingredients:

  • 1 big leek
  • 4 medium potatoes
  • Half red pepper
  • 1 round puff pastry
  • 80/90 g (3 oz) of grated parmesan
  • Salt
  • Grated nutmeg 
  • 1 egg and a little bit of milt to paint the surface of the pie

Method:

Boil the potatoes for 30/40 minutes, until they become soft.

While warm, peel the potatoes and smash them. Keep apart.

Cut the leek into round slices and cook them in a pan with a little bit of butter.

Once the leek becomes transparent, remove it from the heat and keep it apart.

Cut the pepper into small cubes and cook in the same pan where you have cooked the leek.

Once the pepper is soft, put it in a bowl with the mashed potatoes, and the leek. 

Add grated parmesan, salt, grated nutmeg and mix it.

In a round baking tray covered with baking paper, lay the pastry and make some small holes with the fork.

Pour the mixture of leek, potatoes, and pepper on top of the pastry.

In order to obtain a glossy surface, brush the entire surface with a whisked egg and a little bit of milk before baking.

Bake in preheated oven at 180 C (356°F) for about 30/35 minutes.
