Recipe Difficulty Level: easy

Ingredients for the base:

  • 1 kg (35.2 oz) of potatoes
  • 1 egg
  • Salt
  • 50 g (1.7 oz) of grated parmesan
  • 4 tablespoons of flour (‘00’)

Ingredients for the filling:

  • 100 g (3.5 oz) of smoked salmon
  • 100 g (3.5 oz) of mozzarella

Method:

Boil the potatoes. In a bowl, peel and smash them and add 1 egg, salt, flour, and the grated parmesan. Mix.

In a round baking tray (about 20 or 24 cm) covered with baking foil, add half of the compost. With the help of a spoon, compact it.

On top of it, add the slices of smoked salmon and the chopped mozzarella. Add the rest of the potato compost on top of it.

Cook in the pre-heat oven at 170 C (338 F°) for 30/35 minutes. Once the pie starts to become gold, it is ready.

Before eating, wait for the pie to cool down a little bit (when is too warm, it’s soft).
