Potatoes alla Pizzaiola with cooked ham is a quick and easy recipe, ideal to serve as a main course or a tasty side dish, making it a straightforward and perfect dish for both lunch and dinner.

It’s a classic Italian home cooking recipe with a twist, where potatoes take the place of meat. All you need is a good tomato sauce, mozzarella, and the aroma of oregano and basil to prepare a delicious main course, second course, or side dish.

If you decide to serve them as a side dish, I recommend pairing them with a simple and light main course, as Potatoes alla Pizzaiola will surely steal the spotlight. That’s precisely why you could serve them directly as a main course or even as a standalone dish. Of course, don’t forget to have some bread on the table for sopping up the delicious tomato sauce, richly flavored by the soffritto and mozzarella.

The name “Potatoes alla Pizzaiola” brings with it a connection to specific ingredients that remind us of pizza: tomato, mozzarella, basil, and oregano.

This recipe can be customized to suit your tastes. You can replace the tomato puree with peeled tomatoes or fresh cherry tomatoes, or enhance the dish by adding sun-dried tomatoes, olives, or your favorite spices and herbs. You can even omit the ham and include capers and anchovies for a different flavor. For a vegan version, you can use plant-based cheeses to create 100% vegetarian baked potatoes.

A Few Tips

Potatoes alla Pizzaiola with cooked ham can be prepared in advance. When it’s time to serve, simply reheat them and add the mozzarella so you can enjoy them hot and gooey. If mozzarella is unavailable, you can use other cheeses like asiago, fontina, scamorza, or your preferred cheese.

Recipe Difficulty Level: easy

Ingredients:

  • 900 g (2 pounds) potatoes (boiled)
  • Salt
  • Extra virgin olive oil
  • 280 g (1 cup plus 3 tbsp) tomato puree
  • Basil
  • 130 g (4.5 oz) cooked ham, thinly sliced
  • 250 g (8.8 oz) mozzarella (preferably for pizza)
  • Oregano
  • Breadcrumbs

Preparation:

1. Start by cutting the mozzarella into small pieces. If you can’t find pizza cheese, drain it for about an hour to remove excess water.

2. Boil the potatoes in boiling water. After 35-40 minutes, check their doneness by piercing them with a skewer. If they are soft, turn off the heat; otherwise, cook them for a few more minutes. Allow them to cool.

3. Once the potatoes have cooled, peel and slice them into roughly equal slices.

4. Prepare the tomato sauce by seasoning it with salt, oil, and basil. Set it aside.

5. Grease an oven dish with a drizzle of extra-virgin olive oil, sprinkle with breadcrumbs, and create the first layer of potatoes. Season with salt and add some tomato sauce, ham, mozzarella, and oregano.

6. Repeat with another layer of potatoes, salt, tomato sauce, ham, mozzarella, and oregano. Finish with the last layer of potatoes, sauce, ham, mozzarella, and oregano.

7. Bake in preheated oven at 180° C (356°F) for 10 to 15 minutes or until it reaches your desired level of golden brown.

8. Allow it to cool for a bit before serving.

Enjoy! Buon appetito!
