A Few Tips

Potatoes alla Pizzaiola with cooked ham can be prepared in advance. When it’s time to serve, simply reheat them and add the mozzarella so you can enjoy them hot and gooey. If mozzarella is unavailable, you can use other cheeses like asiago, fontina, scamorza, or your preferred cheese.

Recipe Difficulty Level: easy

  • 900 g (2 pounds) potatoes (boiled)
  • Salt
  • Extra virgin olive oil
  • 280 g (1 cup plus 3 tbsp) tomato puree
  • Basil
  • 130 g (4.5 oz) cooked ham, thinly sliced
  • 250 g (8.8 oz) mozzarella (preferably for pizza)
  • Oregano
  • Breadcrumbs

1. Start by cutting the mozzarella into small pieces. If you can’t find pizza cheese, drain it for about an hour to remove excess water.

2. Boil the potatoes in boiling water. After 35-40 minutes, check their doneness by piercing them with a skewer. If they are soft, turn off the heat; otherwise, cook them for a few more minutes. Allow them to cool.

3. Once the potatoes have cooled, peel and slice them into roughly equal slices.

4. Prepare the tomato sauce by seasoning it with salt, oil, and basil. Set it aside.

5. Grease an oven dish with a drizzle of extra-virgin olive oil, sprinkle with breadcrumbs, and create the first layer of potatoes. Season with salt and add some tomato sauce, ham, mozzarella, and oregano.

6. Repeat with another layer of potatoes, salt, tomato sauce, ham, mozzarella, and oregano. Finish with the last layer of potatoes, sauce, ham, mozzarella, and oregano.

7. Bake in preheated oven at 180° C (356°F) for 10 to 15 minutes or until it reaches your desired level of golden brown.

8. Allow it to cool for a bit before serving.

Enjoy! Buon appetito!
