You can also overlap two rolls by moistening them slightly and then flattening them with a rolling pin (just like I did).

Prepare your base dressing; if you want them tastier, you can blend one or more anchovy fillets in oil and add them to the tomato sauce, then season it with plenty of oregano, salt and oil, your puff pastry mini pizza will become irresistible.

Obtain discs of the size you prefer, but consider that some morsels must remain, do not use too large diameters.

Ingredients (for about 40 puff pastry mini pizza):

  • 4 rolls of puff pastry
  • 300-400 g (14 oz) of tomato sauce (passata)
  • Oregano
  • Extra virgin olive oil
  • Salt
  • 100- 120 g (4.2 oz) of mozzarella (dry from the water)


Cut the mozzarella into small cubes, add salt, and put it in a sieve to dry from the water. 

In a bowl, pour the tomato sauce and add salt, oregano, and a little bit of olive oil. Keep apart.

Unwrap 2 puff pastry rolls, brush them with a little bit of water, and pose them one on top of the other.

With the help of a rolling pin, slightly flatten a little bit the pastry. Then do the same with the other two (each small pizza shall be formed by two layers of puff pastry).

With a cutter, create small circles (you can also use glass). Try to do small pizzas.

Add on top of each pizza 1 spoon of tomato sauce and a few cubes of mozzarella. Cook in a pre-heat oven at 180 C (356 F°) for 15/20 minutes.

If you like stringy mozzarella, then put the pizzas in the oven without the mozzarella and add it only 5 minutes before the end. 

Suggestion: If you want to freeze your pizzas, then just prepare them raw, with the tomato sauce and the mozzarella. Then, put it in the freezer on a tray covered with oven foil. Once frozen, then you can put them in a small plastic bag and conserve them in the freezer. When you want to eat them, just heat the oven and cook them (you do not need to de-frozen the pizzas before cooking).
