How to make Saltimbocca alla Romana – easy recipe

Saltimbocca alla Romana is a main Italian dish with meat typical of Lazio region. It is a very easy and quick recipe that even those who are at their first experience with cooking will be able to do. Saltimbocca alla Romana is cooked with slices of veal, Parma ham, and sage.

To make this easy recipe, it is very important to choose thin and excellent quality veal slices and a soft and not excessively seasoned sweet raw ham!

The secret to making soft and juicy Saltimbocca alla Romana like those of the best Italian restaurants is the very short cooking time!

As soon as the slices have been blended with the wine, they should be immediately set aside! While the accompanying cooking sauce is left for a few minutes in the pan it turn into cream! In less than 10 minutes you will prepare the perfect Roman saltimbocca!

Recipe Difficulty Level: easy Servings: 4

Ingredients:

  • 6 slices of veal
  • 3 slices of Parma ham to divide in two (or 6 big slices)
  • 6 fresh leaves of sage
  • 2 tablespoons of butter
  • 1 tablespoon of flour
  • 1 little cup of white wine

Follow this recipe step by step!

Method:

First of all, lie down the veal on a cutting board.

On each slice of veal, pose a piece of Parma ham (this should have more or less the same dimension as the meat).

Add a leave of sage on top of it and attach them with toothpicks, weaving the toothpicks in and out as if you were taking a stitch.

Once your slices are ready, put them in a dish with flour and flour them (only the part below, where there is no ham).

Take a big pan (enough to contain all your slices) and melt the butter. Once the butter is melted, add the slices.

Cook it on low heat for about 40 seconds then add the white wine. Cook on high heat for 60 seconds and move the pan a little bit in order to spread the sauce.

Put your slices in a dish.

Now, put 1 spoon of butter in the same pan.

Cook it for a few seconds and add the sauce to the slices.
