Italian Sausages and stracchino cheese Crostini easy recipe

Little desire to cook or simply have little time? Here is a fabulous idea full of flavor, Italian Sausages, and stracchino cheese Crostini.

As always, simple things are always the best! The croutons are prepared with an excellent stracchino and good quality fresh Italian sausage that makes the difference!

I know that outside Italy it is not so easy to find these products, but I assure you that if you find them you will make a really delicious appetizer!
It is one of the starters that I cook the most in winter, both adults and children like it and it is never enough. Stracchino by itself is not one of my favorite cheeses, I’m more of a fresh pecorino type, but with the sausage it transforms, gives it the creaminess and gentleness it lacks, it’s unbeatable.

For its part, the sausage – always fresh and of good quality, I recommend – mixes with stracchino and melts in the oven, creating a golden crust and keeping it moist. You can also serve them as an appetizer but do not overdo the quantity and size of the Sausages and stracchino cheese Crostini, because otherwise it will be difficult to continue with the meal!

Some variations to the simple Sausages and stracchino cheese Crostini can be the addition of a drop of balsamic vinegar, fennel seeds or cubes of a soft cheese, such as brie or asiago, to increase the gluttony.

Perfect finger food

Sausages and stracchino cheese Crostini is a delicious appetizer and finger food typical of Tuscan cuisine, a dish full of taste and above all that is prepared in a very short time and very easily.

Do you have a baguette? Do you have a couple of Italian sausages and stracchino? Well in less than half an hour you will have your fragrant and steaming bruschetta ready to eat.

Very quick to prepare, these Sausages and stracchino cheese Crostini are ideal to serve at an aperitif or a standing buffet, or when, after returning from the office late, you do not want to give up something satisfying and substantial. You can also enjoy them as a quick meal, complementing with fresh or sautéed vegetables.

Recipe Difficulty Level: easy Servings: 4/6


  • 2 Italian sausages pork
  • 200 g (7 oz) of stracchino cheese (or gongorzola cheese)
  • 1 baguette
  • Rosemary (optional)


Remove the external part of the sausage. Crumble the sausage with your hands and put it in a bowl. Add the stracchino cheese and chopped rosemary (optional); mix it with a fork until you obtain a homogeneous compost.

Cut the baguette in slices (about 1 cm (0.4 Inches)) and add on each slice the compost of sausage and stracchino.

Lay the crostini on a baking tray covered with baking paper.

Cook in pre-heat over for 10-15 minutes at 180 C (356 °F).
