The best Gorgonzola and Pear Risotto 

Gorgonzola and Pear Risotto is a Creamy First Course ideal for the autumn and winter period, where the strong flavor of gorgonzola is softened by the sweet and soft note of pears. An Italian first course with a refined appearance and gourmet flavors, ideal to serve on important occasions or when you have guests for dinner, to amaze them with an elegant recipe that is really easy to prepare.

Gorgonzola and Pear Risotto will conquer you immediately with its contrasts of flavors and textures and the creamy and velvety note, which make it truly irresistible to any palate.

As for the pears, I used the green ones typical of the season, however, the important thing is that they are firm.

For the gorgonzola, I chose the sweet one, a perfect match. But if gorgonzola isn’t your thing, you can replace it with more delicately flavored cheeses that may be right for you, such as Zola cheese or Taleggio cheese. You can also add some walnuts, they will look great!

In Italy, we have a proverb that says “Don’t let the farmer know how good cheese with pears is” and for this reason, we have added a sweet gorgonzola to the ingredients which makes this risotto creamy and tasty sweet, sour notes.

More and more often fruit becomes the protagonist of first and second courses and pears are a perfect ingredient for preparing a risotto that will surprise your guests. A few moves and a few tricks to make it perfect: follow the recipe and your pear risotto will undoubtedly become one of your main dishes!

Ingredients for Gorgonzola and Pear Risotto:

Ingredients for the broth: (alternatively, you can use the bouillon cube and mix it in hot water)

  • 1 onion
  • 1 stick of celery
  • 1,5 l (6 1/3 cups) of water
  • 1 carrot

Ingredients for the risotto:

  • 250 g (8.8 oz) of risotto (possibly Carnaroli or arborio rice)
  • 3 green pears
  • 150 g (5.3 oz) of gorgonzola cheese (alternatively, you can use blue cheese)
  • 50 g (¼ stick plus 1 tbsp) of butter
  • 1 onion
  • Half glass of white wine
  • grated Parmesan
  • Salt


First of all, let’s prepare the broth: boil some water in a pot and add 1 carrot, 1 stick of celery, and 1 onion and cook for 20 minutes.

Chop the onion and brown them on a casserole with the butter.

Add the rice and cook for a few minutes while mixing it.

Then, pour the wine and cook on high heat until it completely evaporates.

Add a little bit of salt.

Pour some hot broth to slightly cover the rice.

When the risotto starts to dry, add some stock to cover the rice.

When the risotto is dry again, add some stock, and so on. The stock shall be added little by little. 

In the meantime, peel the pears and cut them into small cubes.

Cut also the gorgonzola cheese into cubes.

A few minutes before the rice is ready, add the pears and the gorgonzola.

Mix. Once ready, add some butter, and grated Parmesan and mix vigorously.
