Zucchini rolls skewers perfect easy recipe

Zucchini rolls skewers are a delicious second course, perfect also as an appetizer! These are thinly sliced courgettes, stuffed with cheese and rolled in breadcrumbs, then rolled into the shape of courgette rolls and finally baked! Where they will be very tasty, au gratin on the surface and racy inside! A real delicacy!

A quick and easy Italian second course or appetizer, with a few readily available ingredients. They are prepared in a short time and can be baked in the oven or on a grill pan.

By now you all know my passion for this vegetable with which a thousand recipes can be made! From Creamy zucchini soup to Creamy pasta with zucchini and speck or bacon and even a fantastic Italian savory zucchini pie; they are always a resounding success!

This time I thought about some rolls! A quick and easy preparation! which will take up very little time! You can use long green or Roman courgettes.

Simply slice your oiled zucchini with a mandolin and bread them. In this case, I have chosen to prepare tasty Zucchini rolls skewers with cheese, but depending on what you have at home you can give life to a thousand variations: stuff with cooked ham or raw ham, with vegetables, or make zucchini and tuna rolls.

Time to roll them up, a few minutes in the oven and they’re ready to serve! Perfect as a second vegetable dish, children also love them, but they are also perfect as a tasty appetizer for dinners and lunches! They can be prepared well in advance and cooked the next day too!

I made this recipe in the summer and I flavored these Zucchini rolls skewers with fresh mint which gave a very special taste to this recipe; but if you make this dish in another season, don’t worry, you can omit this step, your Zucchini rolls skewers will still be good!

  • 2 zucchini
  • 200 g (7 oz) of scamorza or provola (you can use any stretched cheese)
  • 100 g (2¼ cups) of breadcrumbs
  • Some leaves of fresh mint (optional)
  • 1 clove of garlic
  • Mix of herbs (such as sage, rosemary, thyme etc.)
  • Hot chili pepper (optional)
  • Salt
  • Extra virgin olive oil


Clean the zucchini and cut them into thin slices.

Chop the garlic and the mint leaves.

In a bowl put the sliced zucchini with the mint, the garlic, some salt, and extra virgin olive oil.

Mix with your hands in order to increase the taste of the zucchini.

Cut the cheese into small cubes (about 2 cm x 1 cm).

Now, lay the zucchini slices in a working plan and pose at the center a piece of cheese (If you want you can add a slice of cooked ham or raw ham).

Then, roll the zucchini slices. Pierce 3 or 4 rolls in each skewer.

Chop the herbs and mix them with the breadcrumbs. 

Coat the rolls in breadcrumbs (do it for each side of the rolls).

Take a baking tray covered with parchment paper, spread a drizzle of extra virgin olive oil, and lay the zucchini rolls on.

Add a little bit of oil on top of them.

Cook in preheated oven at 200 C (392 °F) for about 12/ 15 minutes until the surface of the zucchini rolls is golden.
